DIARIO DI VIGNA

Ultimata la potatura invernale...a tempo di record



Oggi ho intervistato Giorgio, il fratello n° 5 , per sapere come stanno andando le cose in vigna...
Nonostante il tempo che quest'anno ci ha “regalato” abbondanti nevicate e un gran numero di giornate gelide ( stanno tornando gli inverni di una volta...altro che effetto serra) abbiamo ultimato la potatura. A tempo di record, bravissimi i nostri potatori che non si sono fermati quasi mai !

La potatura invernale è una pratica di fondamentale importanza per la corretta gestione del vigneto, poiché consente di ottenere viti equilibrate e in grado di garantire una resa corretta e soprattutto un'ottima qualità dell'uva.
E' sicuramente la lavorazione più importante e difficile dell'anno e quando si esegue bisogna tenere conto sia della fertilità del terreno che della vigoria delle piante.
Il sistema di potatura da noi adottato è il guyot semplice. Con questo metodo si tende a lasciare un solo tralcio vecchio con mediamente 6/8 gemme e un piccolo sperone con 2/3 gemme per l'anno a venire.
Detta così sembra molto semplice, ma tutt'altro...spesso bisogna fermarsi con attenzione presso ogni pianta per valutare i comportamenti passati e gli eventuali problemi presenti, quale tralcio scegliere e quante gemme lasciare .Richiede senza dubbio molta esperienza ed abilità...so per certo che queste qualità non mancano e in vendemmia ne ho la conferma tutte le volte che osservo i grappoli...

Finished the pruning winter ... in record time

Despite this year the weather has "given" heavy snowfall and a large number of cold days (the winters are returning to a past times ... other than greenhouse effect ), we finished the pruning. In record time! Very good our pruners that did never stop!
Winter pruning is a practice essential for the right management of the vineyard, because it can get balanced vines and able to ensure a correct yeld and especially an excellent quality of the grapes.
It is the most important and difficult handwork of the year: to be necessary to take both the fertility of the land and the vigor of the plants.
The pruning system we adopted is simple Guyot. This method tends to leave only one old vine branch with 6 / 8 buds and a small branch with 2 / 3 buds for the next year . That seems so very simple, but on the contrary! ... often to be necessary to examine each plant carefully and to consider the past and actual problems, which branch to choose and how many buds to leave. It requires no doubt a lot of experience and skill ... I know for certain that these qualities are not lacking , I have confirmed in vintage time ,when I look at the grapes ...

Anteprima cortese 2009


Oggi ho ripreso il mio lavoro in cantina.
In questo periodo mi dedico soprattutto ai vini bianchi dell'ultima annata che si trovano ancora nelle vasche coibentate ( per il mantenimento della temperatura ) dopo essere stati refrigerati per ottenere la stabilità tartarica.
Tutti i metodi fisici di stabilizzazione tartarica si basano sullo stesso principio base: quello di portare per un certo tempo il vino ad una temperatura molto bassa, alla quale possa avvenire la precipitazione del bitartrato di potassio. Si allontanano poi i cristalli che si sono formati, separandoli dal liquido mantenuto alla temperatura di cristallizzazione, con una filtrazione.

La stabilizzazione tartarica dei vini è un problema con il quale si devono confrontare tutte le cantine. Gioca infatti un ruolo importantissimo nella presentazione dei vini al consumo. Nel caso che la precipitazione non avvenga completamente in vasca, avverrà in un secondo tempo, in bottiglia con la comparsa di cristalli, a volte molto piccoli, ma in alcuni casi possono essere molto evidenti. La presenza in bottiglia di qualche cristallo non altera le caratteristiche del prodotto e non è segno di un "difetto" del vino. Si tratta però di una presenza che viene sempre meno accettata dal consumatore. L'aspetto del sedimento, che può essere cristallino e trasparente, fa a volte addirittura nascere nei consumatori dubbi sulla genuinità del vino.

A giorni vorrei imbottigliare un po' di cortese 2009 ,"Lena", mi sembra già pronto, molto morbido, non ha la tipica acidità che è propria del cortese, ma per questo mi piace di più, anche il profumo mi soddisfa e sicuramente, dopo qualche mese di bottiglia sarà ancora meglio!!!
Anche lo Chardonnay è a buon punto, ma preferisco aspettare, visto il risultato ottenuto nelle annate precedenti, ritengo che sia un bianco da affinare almeno un anno...

Devo andare ... la cantina mi aspetta, ma ci sentiamo presto perchè ho una domanda da fare a tutti i miei lettori riguardo a una mia idea ,una delle tante

Today I resume my work in the cellar.
During this time I devote myself to white wines of last year. Now these wines are in special tanks for temperature maintenance, they were chilled for tartaric stability.

Tartaric stabilization of wines is a problem for all wineries. When the wines are not stable , can have problems in the bottle, may be crystals, sometimes very small, but in some cases very evident. The presence of crystals in the bottle does not change the characteristics of the product and not a sign of a "defect" of the wine. but, this is not accepted by consumers.

I would like to bottle a bit of Cortese 2009, "Lena," I feel ready, very soft, not with the typical acidity that is characteristic of Cortese wine, but I like more, and I like also the fragrance , and certainly after few months of bottle it will be even better!
The Chardonnay has made good progress , but I prefer to wait, I think it is a white to refine at least one year ...

I have to go ... cellar waiting for me, but I'll come back soon because I have a question for all my readers about my idea, one of many

Sono un po' emozionata al pensiero di scrivere su questo “diario di cantina”
tutto quello che accade al mio vino!
Non ho ancora ben chiaro come,cosa e quando scriverò, ma tutto sta è
iniziare...e mi auguro di comunicare a tutti quelli che mi leggeranno cosa ogni
giorno faccio e quello che io sono.
Breve presentazione della mia vita enologica : Graziella ,lunga gavetta in
vigna ,anche come trattorista poi la prima vendemmia in cantina- senza la
supervisione di papà Franco- nel 1984, pessima annata, pessimo vino: non era
stata tutta colpa mia, negli anni a venire è stato quasi sempre molto meglio!

Riprendere dopo le feste Natalizie è sempre traumatico, in cantina fa molto
freddo, fuori ha appena smesso di nevicare.
I giorni precedenti al Natale ho lavorato molto su i vini nuovi, l'annata
2009 sembra essere un'altra ottima annata, sono molto contenta, ma il percorso
prima di arrivare alla bottiglia è così lungo che a volte basta veramente un
piccolo errore per compromettere tanto lavoro in vigna e in cantina.
In questi giorni, visto che le temperature sono proibitive per travasi o
altre lavorazioni , mi dedico più che altro a controlli, assaggi,
confezionamento delle bottiglie e sto parecchio in ufficio, intorno al vino
“gira” un mare di carta, tutto quello che avviene dalla vigna al consumatore è
registrato e controllato... benissimo !?
E scrivo la prima pagina di questo mio diario, ho deciso di raccontare
proprio tutto di ogni vino e tutto quello che gli gira attorno...Per oggi è
tutto




I am a little excited by the thought of writing on this cellar-diary
everything that happens to my wine!
I don't know yet what and when to write, but today my diary starts ... and
I hope to communicate to all those who read me every day what I do and what I
am.
Short presentation of my” wine life “: Graziella, long ranks in the vineyard,
even as a tractor driver and then the first vintage in the cellar, without the
supervision of my Father Franco in 1984, bad year, bad wine :was not all my
fault, in the next years it was nearly always better!

Today January 15, 2010
To resume work after the Christmas holidays is always traumatic, in the
cellar is very cold, outside has just stopped snowing.
The days before Christmas I worked hard on new wines, vintage 2009 seems to
be another good year, I am very happy, but the way before arriving at the
bottle is so long that sometimes a very small mistake can compromise much work
in the vineyard and in the cellar.
These days, since the temperatures are prohibitive for decantations or other
works, I devote myself to tasting ,checking and packaging of bottles . I
often work in the office, around the wine "run" a sea of paper, everything
that happens from the vineyard to the consumer is registered and inspected ...
great!?
And I write the first page of my diary, I decided to tell everything to each
wine and everything revolves around it ... that's all for today
